Method

  1. Turn on Instant Pot to sauté mode and add olive oil.
  2. Add beef tips and brown on all sides, about 5-7 minutes.

  4. Add beef broth, red wine, tomato paste, thyme, salt, and pepper. Stir to combine.
  5. Turn off sauté mode and lock the lid in place.
  6. Cook on high pressure for 20 minutes.
  7. Meanwhile, rinse rice in cold water until the water runs clear.
  8. After 20 minutes, carefully release the pressure and remove the lid.
  9. Add rice and water to the Instant Pot and stir to combine.
  10. Lock the lid in place and cook on high pressure for an additional 10 minutes.
  11. Allow the pressure to release naturally for at least 10 minutes before releasing any remaining pressure and removing the lid.
  12. Fluff the rice with a fork and serve the beef tips and rice hot.

Notes

For a thicker sauce, you can mix 1 tablespoon of cornstarch with 1 tablespoon of water and add it to the Instant Pot after the beef tips are cooked. Stir well and cook on sauté mode until the sauce thickens.
