Description

Rice idli is a popular breakfast dish in India, especially in the southern states. It is a steamed cake made from fermented rice and urad dal batter. It is a healthy and delicious dish that can be served with coconut chutney, sambar, or any other side dish of your choice. Ingredients

  • 1 cup rice
  • 1/2 cup urad dal
  • 1/2 tsp fenugreek seeds
  • 1/2 tsp salt
  • Water for soaking and grinding

Equipment

  • Grinder or mixer grinder
  • Idli plates or moulds
  • Pressure cooker or steamer

Method

1. Wash the rice and urad dal separately and soak them in water for around 6 hours. 2. In a separate bowl, soak fenugreek seeds for 2 hours. 3. Drain the water from rice and urad dal and grind them separately in a grinder or mixer grinder. Add water as required to make a smooth batter. 4. Grind the soaked fenugreek seeds into a fine paste. 5. Mix the rice and urad dal batter together in a large bowl. Add salt and fenugreek paste to it and mix well. 6. Cover the bowl with a lid and keep it in a warm place for around 6-8 hours for fermentation. 7. After fermentation, the batter will rise and become fluffy. Mix the batter gently. 8. Grease the idli plates or moulds with oil and pour the batter into them, filling them up to 3/4th of their capacity. 9. Heat water in a pressure cooker or steamer and place the idli plates in it. 10. Steam the idlis for around 20-25 minutes or until they are cooked. You can check if they are cooked by inserting a knife or toothpick in the center. If it comes out clean, the idlis are ready. 11. Remove the idli plates from the pressure cooker or steamer and let them cool for a few minutes. 12. Use a spoon or knife to remove the idlis from the plates.

Notes

  • You can use a mixture of parboiled and regular rice for better texture.
  • Make sure to grind the batter to a smooth consistency for soft and fluffy idlis.
  • Do not over-ferment the batter as it can turn sour and spoil the taste.
  • If you do not have access to idli plates or moulds, you can use small bowls or cups instead.
