  • 2-3 tbsp oil
  • Salt to taste
  • 2 cups water
  • Few sprigs of coriander leaves, chopped

Method

  1. Wash the rice and soak it in water for 30 minutes.
  2. Heat oil in a pressure cooker, add cumin seeds and mustard seeds. Let them splutter.
  3. Add chopped onions and green chilies. Sauté until onions turn translucent.
  4. Add ginger-garlic paste and sauté for a minute.
  5. Add chopped brinjal and sauté for 2-3 minutes.
  6. Add all the spice powders and salt. Mix well.
  7. Add soaked rice and mix it well with the spice mix.
  8. Add 2 cups of water and mix well.
  9. Cover the pressure cooker with a lid and cook for 2 whistles on medium heat.
  10. Let the pressure release naturally. Open the lid and fluff the rice with a fork.
  11. Garnish with chopped coriander leaves and serve hot.

  • You can add vegetables like carrots, peas or potatoes to this dish to make it more nutritious.
