Method
- Wash the idli rice and urad dal separately in water and soak them in enough water for 4-5 hours.
- After 4-5 hours, drain the water from the rice and dal and grind them separately in a grinder or blender to a fine paste.
- Mix the rice and dal paste in a large bowl, add fenugreek seeds and salt to taste. Add water as required and mix well to make a smooth batter.
- Cover the bowl with a clean cloth or muslin cloth and keep it in a warm place for 8-10 hours or overnight to ferment.
- The next day, the batter will be fermented and will have risen. Mix the batter well and add water if required to get the desired consistency.
- Heat a dosa tawa or non-stick pan on medium heat. Spread some oil on the tawa using a tissue or cloth.
- Take a ladle full of batter and spread it in a circular motion on the tawa to make a thin dosa. Cook on medium heat for 1-2 minutes till the edges start to turn brown.
- Flip the dosa using a spatula and cook for another 1-2 minutes till it turns golden-brown in color.
- Remove the dosa from the tawa and repeat the process with the remaining batter.
- Serve hot with coconut chutney or any other side dish of your choice.
Notes
- The consistency of the batter should be like pancake batter, neither too thick nor too thin.
- While fermenting the batter, keep it in a warm and dry place. The batter will not ferment in a cold or damp place.
- You can adjust the amount of salt as per your taste.
