Ingredients

  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 medium onion, chopped
  • 1 head of garlic, peeled and chopped
  • 1 bunch of cilantro, chopped
  • 1 tbsp. dried oregano
  • 1 tbsp. ground cumin
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 cup olive oil

Method

1. Wash and chop the green and red bell peppers, onion, garlic, and cilantro. 2. Add the chopped vegetables and herbs to a food processor or blender. 3. Add the dried oregano, ground cumin, salt, and black pepper to the food processor or blender. 4. Pulse the ingredients until they are well combined but still slightly chunky. 5. Slowly pour in the olive oil while the blender or food processor is running. 6. Once all the ingredients are combined, transfer the sofrito to a bowl. 7. Store the sofrito in an airtight container in the fridge for up to one week.

Notes

Sofrito can also be frozen for up to three months. Use an ice cube tray to freeze small portions of sofrito for later use.
