- 1 kg chicken or mutton

- 2 tbsp garlic paste
- 2 tbsp biryani masala
- 1 tbsp red chili powder
- 1 tbsp cumin powder
- 1 tbsp coriander powder
- 1 tbsp garam masala
- Salt to taste
- 1/2 cup fried onions
- 1/4 cup chopped coriander leaves
- 1/4 cup chopped mint leaves

Method
- Wash the rice in cold water and soak it for 30 minutes.
- In a large pot, heat the oil or ghee and fry the onions until they are golden brown. Remove half of the onions and set them aside for later.
- Add the chicken or mutton to the pot and fry for 5-7 minutes until it changes color.
- Add the ginger and garlic paste and fry for another 2-3 minutes.
- Add the tomatoes, biryani masala, red chili powder, cumin powder, coriander powder, garam masala, and salt. Mix well and fry for 5 minutes.
- Add the yogurt and mix well. Cover the pot and let it cook on low heat for 20-25 minutes until the meat is tender.
- In a separate pot, boil the rice until it is half cooked. Drain the water and set aside.
- Layer the meat and gravy at the bottom of the pot. Add a layer of rice on top of the meat. Repeat the process until all the rice and meat are used up.
- Mix the milk with the fried onions, coriander leaves, and mint leaves. Pour this mixture on top of the rice.
- Cover the pot with a tight lid and cook on low heat for 30-35 minutes until the rice is fully cooked.
- Once done, let the biryani sit for 5-10 minutes. Serve hot with raita and salad.
