Ingredients

  • 2 kg Basmati Rice
  • 2 kg Chicken (cut into pieces)
  • 2 cups Yogurt
  • 4 Onions (sliced)
  • 1 cup Cooking Oil
  • 4 Tomatoes (chopped)
  • 2 tbsp Ginger Paste
  • 2 tbsp Garlic Paste
  • 4 Green Chilies (chopped)
  • 2 tbsp Red Chili Powder
  • 2 tbsp Cumin Powder
  • 2 tbsp Coriander Powder
  • 2 tbsp Garam Masala Powder
  • 1 tbsp Turmeric Powder
  • 2 tsp Salt (or to taste)
  • 1 cup Fried Onions
  • 1/2 cup Fresh Coriander (chopped)
  • 1/2 cup Fresh Mint Leaves (chopped)
  • 1/2 cup Lemon Juice
  • 2 cups Water

Equipment

Method

  1. Wash the rice and soak it in water for 30 minutes.
  2. In a large pot, heat the oil and fry the sliced onions until they turn golden brown. Remove half of the onions and set them aside for later use.
  3. Add chicken, ginger paste, garlic paste, chopped tomatoes, green chilies, red chili powder, cumin powder, coriander powder, garam masala powder, turmeric powder, and salt to the pot. Mix well and cook for 15-20 minutes.
  4. In a separate pot, boil 2 liters of water with salt. Add the soaked rice and cook for 7-8 minutes or until it is 70% cooked.
  5. Drain the rice and spread it over the chicken mixture. Sprinkle fried onions, fresh coriander, and mint leaves on top of the rice.
  6. Mix yogurt and lemon juice in a bowl and pour it over the rice. Add 2 cups of water and cover the pot with a tight lid. Cook on low heat for 30-40 minutes until the rice is fully cooked and the chicken is tender.
  7. Gently mix the rice and chicken before serving.
  8. Garnish with fried onions and fresh coriander leaves.
  9. Your delicious 2 kg rice biryani is ready to serve.
