Method

  1. Wash the rice in water and soak it for 20 minutes.
  2. Heat oil in a pan and add cumin seeds.
  3. Once the cumin seeds crackle, add chopped onions and cook till they turn translucent.
  4. Add ginger garlic paste and cook for a minute.
  5. Add chopped tomatoes and cook till they turn soft and mushy.
  6. Add chopped vegetables and cook for 5-7 minutes on medium flame.
  7. Add salt, coriander powder, red chilli powder, and garam masala and mix well.
  8. Cook for another 2-3 minutes and turn off the heat.
  9. Cook the soaked rice in a large pot with 2 cups of water till it is fully cooked.
  10. Mix the cooked vegetables with the cooked rice and garnish with coriander leaves.
  11. Mixed Vegetable Rice is ready to serve.
