Description

Nasi Lemak is a popular Malaysian dish that is often served for breakfast. It is made up of fragrant coconut rice, crispy fried anchovies, peanuts, cucumber slices, and a spicy sambal sauce. Traditionally, Nasi Lemak is cooked in a pot, but with this recipe, you can easily make it in a rice cooker.

Ingredient

For the coconut rice:
  • 2 cups of Jasmine rice
  • 1 can of coconut milk
  • 2 cups of water

  • 10-15 dried chili peppers
  • 3 cloves of garlic
  • 1 onion
  • 1 tablespoon of tamarind paste
  • 1 tablespoon of sugar
  • 1 teaspoon of salt
For the toppings:
  • Fried anchovies
  • Roasted peanuts
  • Cucumber slices
  • Boiled eggs
  • Sliced chicken or beef (optional)

Equipment

  • Rice cooker
  • Blender or food processor
  • Frying pan

Method

1. Rinse the rice a few times until the water runs clear.
2. In the rice cooker, add the rinsed rice, coconut milk, water, and salt. Mix well.
3. Turn on the rice cooker and let it cook. Once done, let it sit for 10 minutes before fluffing with a fork.
4. While the rice is cooking, prepare the sambal sauce. Soak the dried chili peppers in hot water until they are soft.
5. In a blender or food processor, blend the soaked chili peppers, garlic, onion, tamarind paste, sugar, and salt until it becomes a smooth paste.
6. In a frying pan, heat up some oil and fry the sambal paste until fragrant.
7. Add some water to the frying pan and let it simmer for a few minutes until it thickens.
8. In another frying pan, fry the anchovies until crispy.
9. To assemble the Nasi Lemak, serve the coconut rice with the sambal sauce, fried anchovies, roasted peanuts, cucumber slices, boiled eggs, and sliced chicken or beef (optional).

Notes

If you want your Nasi Lemak to be more fragrant, you can add some pandan leaves to the rice cooker when cooking the rice. You can also adjust the spiciness of the sambal sauce to your liking.
