Prep Time

The prep time for this recipe is approximately 30 minutes.

Cook Time

The cook time for this recipe is approximately 1 hour.

Ingredients

  • 3 cups of long-grain rice
  • 4 large tomatoes
  • 2 red bell peppers
  • 2 onions
  • 4 cloves of garlic
  • 2 scotch bonnet peppers
  • 1/2 cup of vegetable oil
  • 3 tablespoons of tomato paste
  • 2 teaspoons of smoked paprika
  • 2 teaspoons of curry powder
  • 2 teaspoons of thyme
  • 2 teaspoons of salt
  • 4 cups of chicken stock

Equipment

  • Large pot with lid
  • Blender
  • Cutting board
  • Knife
  • Spatula

Method

  1. Prepare the ingredients by washing the rice, tomatoes, red bell peppers, onions, and scotch bonnet peppers.
  2. Cut the tomatoes, red bell peppers, onions, and scotch bonnet peppers into chunks and place them in a blender.
  3. Add the garlic, tomato paste, smoked paprika, curry powder, thyme, and salt to the blender and blend until smooth.
  4. Heat the vegetable oil in a large pot over medium-high heat.
  5. Add the blended tomato mixture to the pot and cook for 10 minutes, stirring occasionally.
  6. Add the rice to the pot and stir until the rice is coated with the tomato mixture.
  7. Add the chicken stock to the pot and stir until well combined.
  8. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
  9. Simmer the rice for 30-40 minutes, or until it is fully cooked and the liquid has been absorbed.
  10. Remove the pot from the heat and let it rest for 5-10 minutes.
  11. Fluff the rice with a fork and serve.

Notes

  • For a smokier flavor, you can grill the tomatoes, red bell peppers, and onions before blending them.
  • If you don't have chicken stock, you can use water instead.
  • If the rice is not fully cooked after 40 minutes, you can add more liquid and continue simmering until it is done.
