- 1 pound of shrimp, peeled and deveined
- 4 cups of cooked white rice
- 1 cup of fresh pineapple, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 medium onion, diced
- 4 cloves of garlic, minced
- 2 tablespoons of vegetable oil
- 2 tablespoons of soy sauce
- 1 tablespoon of oyster sauce
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 2 eggs, lightly beaten
- 2 green onions, thinly sliced

Method
- Heat the vegetable oil in a wok or large skillet over medium-high heat.
- Add the onion and garlic and stir-fry for 30 seconds.

- Push the shrimp to the side of the wok or skillet and add the beaten eggs. Scramble the eggs until cooked.
- Add the cooked rice, pineapple, red and green bell peppers, soy sauce, oyster sauce, salt, and black pepper to the wok or skillet.
- Stir-fry for 3-4 minutes, until the rice is heated through and the vegetables are tender-crisp.
- Stir in the sliced green onions and serve hot.
Notes
