Ingredients

For the burritos:
  • 8 large flour tortillas
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro

Method

1. In a large skillet, heat the vegetable oil over medium-high heat. 2. Add the pork and cook until browned on all sides, about 5 minutes. 3. Add the onion and garlic to the skillet and cook until softened, about 3 minutes. 4. Add the cumin, smoked paprika, oregano, salt, and black pepper to the skillet and stir to combine. 5. In a large pot with a lid, combine the rice, water, salt, and black pepper. 8. Once the pork is done cooking, remove it from the skillet and place it in a large bowl. 10. Use a fork to shred the pork into small pieces. 11. To assemble the burritos, place a tortilla on a plate and spoon some of the rice onto the center of the tortilla. 12. Add some of the shredded pork, black beans, cheddar cheese, sour cream, and cilantro on top of the rice. 13. Fold in the sides of the tortilla and roll it up tightly. 14. Repeat with the remaining tortillas and filling.
