- 1/4 tsp of asafoetida
- 1/4 tsp of turmeric powder
- 10-12 curry leaves
- 1/4 cup of roasted peanuts
- Salt, as per taste

Method
- Wash the rice and soak it in water for 20 minutes.
- Drain the water and cook the rice in a pressure cooker with 2 cups of water. Once the rice is cooked, spread it out on a plate to cool.
- Soak the tamarind in warm water for 10 minutes. Squeeze the pulp out of the tamarind and keep it aside.
- Heat oil in a frying pan. Add mustard seeds and let them splutter.
- Add cumin seeds, chana dal, urad dal, dry red chilies, asafoetida, turmeric powder, and curry leaves.
- Saute for a minute or two until the dals turn golden brown.
- Add tamarind pulp to the pan and cook for 5 minutes until the raw smell of tamarind goes away.
- Add salt and mix well.
- Once the tamarind mixture cools down, add it to the cooked rice and mix well.
- Add roasted peanuts and mix well.
- Tamarind rice is ready to serve.

- You can adjust the spiciness of the dish by adding more or fewer red chilies.
