Ingredients

  • 1 1/2 cups of bomba rice
  • 4 cups of chicken broth
  • 3 tablespoons of olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced

  • 1/2 cup of frozen peas
  • Salt and pepper to taste

Equipment

  • Paella pan
  • Wooden spoon
  • Cutting board
  • Knife
  • Measuring cups and spoons

Method

  1. Heat the olive oil in a paella pan over medium-high heat.
  2. Add the onion and garlic and sauté until the onion is translucent.
  3. Add the smoked paprika and saffron threads and stir for 1 minute.
  4. Add the bomba rice and stir for 1 minute until the rice is coated with the oil and spices.
  5. Add the white wine and stir until it has been absorbed by the rice.
  6. Add the chicken broth and stir well.
  7. Arrange the sliced bell peppers and diced tomato on top of the rice.
  8. Add the shrimp and mussels to the pan.
  9. Bring the mixture to a boil, then reduce the heat to low and let it simmer for around 20 minutes.
  10. After 20 minutes, sprinkle the frozen peas on top of the rice and cook for an additional 5-10 minutes until the rice is tender and the seafood is cooked through.
  11. Remove from heat and let it sit for 5-10 minutes before serving.

Notes

  • Bomba rice is a short-grain rice that is ideal for paella because it absorbs liquid without becoming mushy.
  • You can substitute the chicken broth with seafood broth for a more authentic flavor.
  • If you don’t have a paella pan, you can use a large skillet or a Dutch oven.

Recipe Tips

  • Make sure to use a good quality saffron for a more flavorful dish.
  • Do not stir the rice after adding the chicken broth. This will help create the crispy bottom layer of the rice, which is a key feature of traditional paella.
  • If you want to add more seafood or meat to the dish, feel free to experiment with different combinations.
  • This dish is best served with a side of crusty bread and a glass of Spanish red wine.
