- 1 cup of Uncle Ben’s wild rice
- 1 pound of boneless, skinless chicken breasts

- 3 cloves of garlic, minced
- 3 carrots, peeled and chopped
- 3 celery stalks, chopped
- 2 tablespoons of olive oil
- 8 cups of chicken broth
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt and pepper to taste

Method
- Start by rinsing the wild rice under cold running water and set it aside.
- Heat the olive oil in a large pot over medium heat.
- Add the chicken breasts and cook them for 5 minutes on each side until they are golden brown.
- Remove the chicken breasts from the pot and set them aside on a plate.
- Add the chopped onion, garlic, carrots, and celery to the pot and cook them for 5-7 minutes until they are soft.

- Season the soup with thyme, rosemary, salt, and pepper to taste.
