Ingredients

  • 1 cup of Uncle Ben’s wild rice
  • 1 pound of boneless, skinless chicken breasts
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 2 tablespoons of olive oil
  • 8 cups of chicken broth
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste

  • A wooden spoon
  • A sharp knife
  • A cutting board

Method

  1. Start by rinsing the wild rice under cold running water and set it aside.
  2. Heat the olive oil in a large pot over medium heat.
  3. Add the chicken breasts and cook them for 5 minutes on each side until they are golden brown.
  4. Remove the chicken breasts from the pot and set them aside on a plate.
  5. Add the chopped onion, garlic, carrots, and celery to the pot and cook them for 5-7 minutes until they are soft.
  6. Add the wild rice to the pot and stir it for 1-2 minutes until it is lightly toasted.
  7. Add the chicken broth to the pot and bring it to a boil.
  8. Reduce the heat to low and simmer the soup for 45 minutes.
  9. Add the chicken breasts back to the pot and continue to simmer the soup for another 10-15 minutes.
  10. Season the soup with thyme, rosemary, salt, and pepper to taste.

Notes

This soup can be stored in an airtight container in the refrigerator for up to 3 days. It can also be frozen for up to 3 months. When reheating, add a little bit of water or chicken broth to thin out the soup as it may thicken in the fridge or freezer.
