Ingredients

  • 2 cups of basmati rice

  • 1/2 teaspoon of cumin seeds
  • 1/2 teaspoon of turmeric powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of chopped cilantro

Method

  1. Wash the basmati rice until the water runs clear.
  2. Add the rice to a large pot with 3 cups of water and bring it to a boil.
  3. Reduce the heat to low, cover the pot and let it simmer for 15-20 minutes until the rice is cooked and the water has been absorbed.
  4. Heat the oil in a frying pan over medium heat.
  5. Add the cumin seeds and let them sizzle for a few seconds.
  6. Add the chopped onions and cook until they are soft and translucent.
  7. Add the minced garlic and cook for another minute.
  8. Add the mixed vegetables and cook for 5-7 minutes until they are tender.
  9. Add the turmeric, salt, and black pepper and mix well.
  10. Add the cooked rice to the frying pan and mix well with the vegetables and spices.
  11. Garnish with chopped cilantro and serve hot.

Notes

You can use any vegetables of your choice in this recipe. You can also add some protein like chicken or shrimp to make it a complete meal.
