Ingredients

For the pork:

  • 2 scallions, thinly sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup pickled vegetables

Method

1. Rinse the rice in a strainer and let it soak in water for 30 minutes. 2. In a small saucepan, combine the soy sauce, rice wine, brown sugar, garlic, ginger, star anise, cinnamon stick, and 2 cups of water. Bring it to a boil, then reduce the heat to low and let it simmer for 5 minutes. 3. In a Dutch oven or heavy-bottomed pot, heat the vegetable oil over medium-high heat. Add the pork belly pieces and cook until they are browned on all sides, about 5 minutes. 4. Pour the sauce over the pork, making sure that all the pieces are covered. Bring it to a boil, then reduce the heat to low and let it simmer for 2 hours, or until the pork is tender and the sauce has thickened. 5. While the pork is cooking, drain the rice and put it into a pot with 2 cups of water. Bring it to a boil, then reduce the heat to low and let it simmer for 18 minutes or until the water has been absorbed. 6. Once the pork is cooked, remove it from the pot and set it aside. Skim off any excess fat from the sauce. 7. Serve the pork on top of the rice and pour the sauce on top. Garnish with scallions, cilantro, and pickled vegetables.
