Prep Time

The prep time for this recipe is approximately 15 minutes.

Cook Time

The cook time for this recipe is approximately 2 hours.

Ingredients

  • 1 pound dry red kidney beans
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 smoked ham hock
  • 6 cups water
  • 2 cups long grain white rice
  • Salt and pepper to taste

Equipment

  • Dutch oven or large pot with a lid
  • Colander
  • Large bowl
  • Cutting board
  • Chopping knife
  • Measuring cups and spoons
  • Wooden spoon

Method

  1. Sort and rinse the kidney beans. Place them in a large bowl and cover with water. Let soak for at least 8 hours or overnight.
  2. Heat the olive oil in a Dutch oven or large pot over medium heat. Add the onion, bell pepper, and celery. Cook until the vegetables are soft, about 5 minutes.
  3. Add the minced garlic, Cajun seasoning, and thyme. Cook for another 2 minutes, stirring constantly.
  4. Drain the soaked beans and add them to the pot. Stir to combine with the vegetables.
  5. Add the ham hock and 6 cups of water to the pot. Bring to a boil.
  6. Reduce the heat to low and cover the pot with a lid. Simmer for 1 1/2 to 2 hours, or until the beans are tender and the liquid has thickened.
  7. Remove the ham hock from the pot and let cool slightly. Remove the meat from the bone and shred it. Discard the bone and add the shredded meat back to the pot.
  8. Meanwhile, cook the rice according to package directions.
  9. When the beans are done, season with salt and pepper to taste.
  10. To serve, spoon the beans over the rice.

Notes

  • You can also use canned kidney beans if you don't have time to soak dried beans.
  • If you don't have a ham hock, you can use bacon or sausage for flavor.
  • If the liquid is too thick, add more water or chicken broth.
  • This recipe makes about 8 servings.
