Ingredients

  • 2 cups jasmine rice

  • 2 tablespoons vegetable oil

Method

  1. Clean the chicken and remove any excess fat. Rub salt all over the chicken and set aside for 30 minutes.

  3. Add the rice to the pot and stir for 1-2 minutes until the rice is coated with oil and slightly toasted.
  4. Add the chicken broth to the pot and stir well. Bring to a boil, then reduce the heat to low and cover the pot. Cook for 15-20 minutes, or until the rice is tender and the broth has been absorbed.
  5. While the rice is cooking, prepare the chicken. In a medium pot, bring water to a boil. Add the chicken and reduce the heat to low. Poach the chicken for 30 minutes, or until the internal temperature reaches 75°C.
  6. Remove the chicken from the pot and let it cool for a few minutes. Carve the chicken into bite-sized pieces and set aside.
  7. In a small bowl, mix together the soy sauce, sesame oil, and a few tablespoons of the chicken broth to make the dipping sauce.
  8. To serve, place a scoop of rice on a plate, top with some chicken pieces, and drizzle with the dipping sauce.
