Method

  1. Rinse the glutinous rice under running water until the water runs clear. Drain the rice.

  3. Bring the rice to a boil over high heat. Reduce the heat to low and cover the pan. Let the rice simmer for 15-20 minutes or until the water is absorbed and the rice is tender.
  4. In a separate pan, combine the coconut milk, sugar, and salt. Cook over medium heat, stirring constantly until the sugar dissolves.
  5. Remove the cooked rice from the heat and add the coconut milk mixture. Stir until the rice is well coated.
  6. Cover the rice and let it sit for 10-15 minutes. The rice will absorb the coconut milk and become sticky.
  7. In the meantime, toast the sesame seeds in a dry pan over medium heat until they are golden brown.
  8. After the rice has rested, fluff it with a fork and transfer it to a large bowl.
  9. Top the rice with the sliced mango and sprinkle the toasted sesame seeds on top.
