Method
- Wash the rice and drain it.

- Once the timer goes off, let the pressure release naturally for 10 minutes.
- After 10 minutes, turn the valve to venting to release any remaining pressure.
- Open the Instant Pot lid and stir the rice.
- Add the evaporated milk, sugar, vanilla extract, cinnamon, and nutmeg to the Instant Pot and stir.
- Close the Instant Pot lid and turn the valve to sealing.
- Press the manual button and set the timer for 5 minutes.
- Once the timer goes off, let the pressure release naturally for 5 minutes.
- After 5 minutes, turn the valve to venting to release any remaining pressure.
- Open the Instant Pot lid and stir the rice pudding. It will be creamy and thick.
- Serve the rice pudding warm or chilled.
