Ingredients

  • 500g ground beef
  • 1 onion, finely chopped

  • 1 celeriac, peeled and cubed
  • 1/2 cup heavy cream
  • 1 cup spinach, chopped
  • 2 cups cooked rice
  • 1/4 cup chopped fresh parsley

Method

  1. In a large bowl, mix ground beef, onion, egg, breadcrumbs, salt, and pepper until well combined.
  2. Form the mixture into small meatballs, about 1-2 inches in diameter.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the meatballs and cook until browned on all sides, about 5-7 minutes.
  5. Remove the meatballs from the skillet and set them aside.
  6. In the same skillet, add celeriac and cook until tender, about 10-15 minutes.
  7. Puree the celeriac with heavy cream in a blender until smooth.
  8. Meanwhile, cook rice according to package instructions.
  9. In the same skillet, add spinach and cook until wilted, about 3-5 minutes.
  10. Add cooked rice and chopped parsley to the skillet and mix well.
  11. Place the meatballs on top of the rice and spinach mixture.
  12. Serve with celeriac puree on the side.

Notes

For a healthier option, you can use ground turkey instead of ground beef. You can also substitute breadcrumbs with almond flour or gluten-free breadcrumbs for a gluten-free version.
