Method

1. Rinse the jasmine rice in a fine mesh strainer and add it to a large saucepan with 2 cups of water. Bring to a boil, then reduce the heat to low and cover. Bring to a simmer and cook for 10-15 minutes or until the sauce has thickened. 6. Remove the curry from the heat and stir in the fresh basil leaves. 7. Serve the curry with the steamed jasmine rice.

Notes
