For the curry:- 1 lb. boneless, skinless chicken breast, cut into small pieces
- 1 can (14 oz.) coconut milk
- 1 tbsp. green curry paste
- 1 tbsp. fish sauce
- 1 tbsp. brown sugar
- 1 tbsp. vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 1 cup fresh basil leaves
- 1 cup jasmine rice
- 2 cups water

Method
1. Rinse the jasmine rice in a fine mesh strainer and add it to a large saucepan with 2 cups of water. Bring to a boil, then reduce the heat to low and cover. Cook for 18-20 minutes or until the rice is tender and the water is absorbed. 2. In a large frying pan, heat the vegetable oil over medium-high heat. Add the sliced chicken and cook until browned, about 5-7 minutes. 3. Add the sliced bell peppers and onion to the pan and cook for an additional 5 minutes or until the vegetables are tender. 4. In a separate bowl, whisk together the coconut milk, green curry paste, fish sauce, and brown sugar until well combined. 5. Pour the curry mixture over the chicken and vegetables and stir to combine. Bring to a simmer and cook for 10-15 minutes or until the sauce has thickened. 6. Remove the curry from the heat and stir in the fresh basil leaves. 7.
