Method

1. Rinse the rice in water and soak it for 15 minutes. 2. In a pressure cooker, heat 2 tbsp of oil. 3. Add cumin seeds and let them splutter. 4. Add finely chopped garlic and ginger. Saute until it turns golden brown. 5. Add finely chopped onions and saute until they turn translucent. 6. Add finely chopped tomatoes and saute until they become soft and mushy. 7. Add finely chopped carrots, capsicum, and green peas. Mix well. 8. Add coriander powder, red chili powder, and salt. Mix well. 9. Add 2 cups of water and mix well. 10. Drain the water from the soaked rice and add it to the pressure cooker. Mix well. 11. Close the pressure cooker and cook for 2 whistles on medium flame. 12. Turn off the flame and let the pressure release naturally. 13. Open the pressure cooker and mix the rice gently. 14. Vegetable rice is ready to serve hot.

Notes

- You can add more vegetables of your choice. - You can adjust the spice level according to your taste. - If you do not have a pressure cooker, you can cook the rice in a regular pot.
