Ingredients

  • 1 cup basmati rice
  • 1 1/2 cups coconut milk

  • 1/2 teaspoon turmeric powder
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 green chili, chopped
  • 1/4 cup fresh cilantro, chopped

Method

  1. Rinse the rice with cold water until the water runs clear.
  2. Place the rice in a saucepan with the coconut milk, salt, pepper, cumin seeds, coriander seeds, and turmeric powder. Bring to a boil over high heat.
  3. Reduce the heat to low, cover the saucepan with a lid, and simmer for 15-20 minutes, or until the rice is cooked through and the liquid has been absorbed.
  4. While the rice is cooking, heat the vegetable oil in a frying pan over medium-high heat.
  5. Add the onion and garlic to the pan and sauté for 2-3 minutes, or until the onion is translucent.
  6. Add the green chili to the pan and sauté for another minute.
  7. Add the cooked rice to the frying pan and stir well to combine.
  8. Garnish with fresh cilantro and serve hot.

Notes

This dish can be made with any type of rice, but basmati rice is recommended. Adjust the amount of salt and pepper to taste. For a milder version, remove the seeds from the green chili before chopping.
