This recipe is a popular one from the kitchen of Sanjeev Kapoor, the famous Indian chef and TV personality. The dish is made with cooked rice, stir-fried with chicken, vegetables and a spicy Schezwan sauce. It is a great way to use leftover rice and turn it into a delicious meal.

Ingredients

For the Schezwan sauce:
  • 1/4 cup vegetable oil
  • 1 tablespoon garlic, finely chopped
  • 1 tablespoon ginger, finely chopped
  • 2-3 green chillies, finely chopped
  • 1/4 cup tomato ketchup
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon red chilli sauce
  • 1 tablespoon cornflour
  • 1/4 cup water
For the fried rice:
  • 2 cups cooked rice
  • 1 cup boneless chicken, cut into small pieces
  • 1/2 cup onion, chopped
  • 1/2 cup carrot, chopped
  • 1/2 cup capsicum, chopped
  • 1/4 cup spring onions, chopped
  • 2 tablespoon vegetable oil
  • Salt to taste
  • Black pepper powder to taste

Equipment

  • Wok or a large frying pan
  • Knife
  • Cutting board
  • Bowl
  • Spoon

Method

Step 1: Making the Schezwan sauce

1. Heat 1/4 cup vegetable oil in a wok or a large frying pan over medium heat. 2. Add 1 tablespoon of finely chopped garlic, 1 tablespoon of finely chopped ginger and 2-3 finely chopped green chillies. Stir-fry for a minute. 3. Add 1/4 cup tomato ketchup, 1 tablespoon soy sauce, 1 tablespoon vinegar and 1 tablespoon red chilli sauce. Mix well and cook for 2-3 minutes. 4. In a bowl, mix 1 tablespoon cornflour with 1/4 cup water to make a slurry. 5. Add the slurry to the pan and mix well. Cook for another 2-3 minutes or until the sauce thickens. Keep aside.

Step 2: Making the fried rice

1. Heat 2 tablespoons of vegetable oil in the same wok over high heat. 2. Add 1/2 cup chopped onions and stir-fry for a minute. 3. Add 1 cup of boneless chicken pieces and stir-fry until cooked. 4. Add 1/2 cup chopped carrots, 1/2 cup chopped capsicum and stir-fry for a minute. 5. Add 2 cups of cooked rice, salt and black pepper powder to taste. Mix well. 6. Add the prepared Schezwan sauce and mix well. 7. Add 1/4 cup chopped spring onions and mix well. 8. Serve hot.

Notes

  • You can adjust the spice level of the Schezwan sauce according to your taste.
  • You can add other vegetables like beans and peas to the fried rice.
  • Make sure the rice is cooked and cooled before making the fried rice.
