Description

Chinese rice paper rolls are a popular snack and appetizer that originated in Vietnam. They are made with rice paper wrappers that are filled with vegetables and/or meat and served with a dipping sauce. These rice paper rolls are light, healthy and a perfect option for a party or a quick snack.

Ingredients

  • 10-12 rice paper sheets
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1 red bell pepper, julienned
  • 1 avocado, sliced
  • 1/2 cup cooked shrimp, sliced in half
  • 1/2 cup cooked chicken, shredded
  • 1/2 cup cooked vermicelli noodles
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh basil leaves
  • 1/4 cup hoisin sauce
  • 1/4 cup peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 garlic clove, minced
  • 1/4 cup warm water

Equipment

  • Large bowl

Method

  1. Prepare the filling ingredients before assembling the rolls.
  2. Fill a large bowl with warm water.
  3. Dip one rice paper sheet into the water, making sure it is fully submerged, and hold it there for 10-15 seconds until it starts to soften.
  4. Remove the rice paper sheet from the water and lay it flat on a cutting board or a clean surface.
  5. Place a small amount of each filling ingredient in the center of the rice paper sheet, leaving room at the edges to wrap the roll.
  6. Add a few mint, cilantro, and basil leaves on top of the filling ingredients.
  7. Roll up the rice paper sheet tightly, tucking in the sides as you go.
  8. Repeat with the remaining rice paper sheets and filling ingredients.
  9. In a small bowl, whisk together the hoisin sauce, peanut butter, soy sauce, honey, lime juice, garlic, and warm water to make the dipping sauce.
  10. Serve the rice paper rolls with the dipping sauce on the side.

Notes

These rice paper rolls can be made ahead of time and stored in the fridge for a few hours. To prevent them from sticking together, place them on a plate or tray and cover with a damp towel.
