Ingredients

For the chicken: - 1 whole chicken, about 1.5kg - 4 slices of ginger - 4 cloves of garlic - 4 stalks of spring onion, cut into 2-inch lengths - 2 tsp of salt - 2 tbsp of sesame oil For the rice: - 2 cups of jasmine rice - 2 cups of chicken broth - 2 cloves of garlic, minced - 1 inch of ginger, sliced - 1 pandan leaf (optional) - 1 tbsp of vegetable oil - Salt to taste For the sauce: - 2 tbsp of dark soy sauce - 2 tbsp of light soy sauce - 2 tbsp of sesame oil - 2 cloves of garlic, minced - 1 inch of ginger, grated - 2 stalks of spring onion, thinly sliced

Method

1. Rinse the chicken and pat it dry with a paper towel. 2. Rub the chicken with salt and sesame oil. 3. Stuff the chicken cavity with ginger, garlic, and spring onion. 4. In a large pot, bring enough water to cover the chicken to a boil. 5. Add the chicken and reduce the heat to a simmer. 6. Cover the pot and simmer for 30 minutes. 7. Turn off the heat and let the chicken sit in the pot for 15 minutes. 8. Remove the chicken from the pot and let it cool. 9. In a rice cooker, heat the vegetable oil and sauté the garlic and ginger until fragrant. 10. Add the rice and stir well. 11. Pour in the chicken broth and pandan leaf (if using). 12. Cook the rice according to your rice cooker's instructions. 13. In a small mixing bowl, mix together the dark soy sauce, light soy sauce, sesame oil, garlic, ginger, and spring onion. 14. Serve the chicken with the rice and sauce on the side.

Notes
