Method

  1. Rinse the brown rice and set it aside.
  2. Turn the instant pot on to the sauté function.
  3. Add the chopped onion and garlic to the pot and sauté until the onion is translucent, about 3 minutes.
  4. Add the chopped red bell pepper, zucchini, and frozen peas to the pot and sauté for an additional 2 minutes.
  5. Add the rinsed brown rice to the pot and stir well to combine.
  6. Add the vegetable broth or water to the pot and stir well to combine.
  7. Add the dried oregano, basil, thyme, salt, and black pepper to the pot and stir well to combine.
  8. Close the instant pot lid and set the valve to the sealing position.
  9. Set the instant pot to the manual high-pressure setting and cook for 22 minutes.
  10. After the cooking time is complete, let the pressure release naturally for 10 minutes.
  11. After the 10 minutes, carefully release any remaining pressure using the quick-release valve.
  12. Open the instant pot and stir the rice and vegetables well.
  13. Serve hot and enjoy!

You can use any vegetables you like in this recipe. Try adding broccoli, carrots, or mushrooms.
