  • 1 teaspoon of green chili, finely chopped
  • 1/4 teaspoon of turmeric powder
  • 1/4 teaspoon of asafoetida
  • 1/4 cup of lemon juice
  • Salt to taste
  • Water as needed
  • Fresh coriander leaves for garnish

Method

  1. Wash the rice thoroughly and soak it in water for 15 minutes.
  2. Heat oil in a pot and add mustard seeds. When the seeds start to splutter, add urad dal, chana dal, dried red chilies, peanuts, and cashews.
  3. Sauté for a minute and add ginger and green chili. Sauté until the ginger turns golden brown.
  4. Add turmeric powder and asafoetida. Mix well.
  5. Add the soaked rice and sauté for a minute.
  6. Add 2 cups of water and salt to taste. Mix well.
  7. Cover the pot and let it cook on low heat for 15 minutes or until the rice is cooked.
  8. In a skillet, heat lemon juice on low heat.
  9. When the rice is cooked, add the lemon juice to the pot and mix well.
  10. Garnish with fresh coriander leaves and serve hot.

Notes

  • You can add more or less lemon juice as per your taste.
  • If you don't have asafoetida, you can skip it.
  • You can substitute peanuts and cashews with other nuts of your choice.
  • If the rice is not cooked properly, add a little more water and let it cook for a few more minutes.
