1/2 cup sugar
1/4 tsp salt
1 1/4 cups water
1/4 cup vegetable oil
1 tsp vanilla extract (optional)
For the red bean paste:

Method
1. Rinse the red beans and soak them in water overnight. 2. Drain the red beans and rinse them again. 3. In a saucepan, add the red beans and 6 cups of water. Bring to a boil, then reduce heat and let simmer for 1-2 hours or until the beans are soft and can be easily mashed. 4. Drain any excess liquid from the red beans and add the sugar. Mash the beans until they form a paste. 5. In a mixing bowl, combine the glutinous rice flour, sugar, and salt. Mix well. 6. Add water, vegetable oil, and vanilla extract (if using) to the dry ingredients. Mix until a smooth batter forms. 7. Grease a 9-inch cake pan with vegetable oil. 8. Pour half of the batter into the cake pan. 9. Spoon the red bean paste onto the batter, spreading it evenly. 10. Pour the remaining batter on top of the red bean paste. 11. Steam the cake for 25-30 minutes. 12. Let the cake cool for 5-10 minutes before slicing and serving.
Notes
- If you do not have a steamer, you can use a large pot with a steamer basket or colander. - You can also use store-bought red bean paste instead of making your own.
- Make sure the batter is smooth and free of lumps before pouring it into the cake pan. - If the red bean paste is too thick, you can add a little bit of water to thin it out. - You can add other fillings to the cake, such as coconut or sesame seeds. - Leftover cake can be stored in the refrigerator for up to 3 days. Simply reheat in the microwave or steam before serving.
