Hainanese chicken rice is a classic dish that originated in Hainan province, China. Ingredients

  • 1 whole chicken (about 1.5kg)
  • 2 cups of jasmine rice
  • 4 cups of chicken broth
  • 3 cloves of garlic, minced
  • 2 inches of ginger, sliced
  • 1 tbsp of sesame oil
  • 1 tbsp of soy sauce
  • 1 tbsp of oyster sauce
  • 1 tbsp of vegetable oil
  • Salt and pepper to taste

  • A rice cooker
  • A chopping board
  • A knife

Method

  1. Clean the chicken and remove any excess fat. Rub salt all over the chicken and let it sit for 10 minutes. Rinse the chicken with water and pat it dry.
  2. In a large pot, add enough water to cover the chicken. Add the garlic, ginger, and a pinch of salt. Bring the water to a boil and add the chicken. Lower the heat and let the chicken simmer for 30 minutes or until it is cooked through.
  3. Remove the chicken from the pot and let it cool. Reserve 4 cups of the chicken broth for the rice.
  4. Rinse the rice and add it to a rice cooker. Add the reserved chicken broth, sesame oil, soy sauce, oyster sauce, and vegetable oil. Stir to combine.
  5. Place the chicken on a cutting board and chop it into bite-sized pieces.
  6. Once the rice is cooked, fluff it up with a fork and serve it with the chopped chicken and an assortment of condiments such as sliced cucumbers, chili sauce, and soy sauce.

Notes

  • If you don't have a rice cooker, you can cook the rice in a pot. Simply add the rice and chicken broth to a pot, bring it to a boil, and then lower the heat and let it simmer until the rice is cooked.
  • You can use leftover chicken broth for other recipes or freeze it for later use.
  • If you want to make the chicken skin crispy, you can brush it with some oil and broil it in the oven for a few minutes.
