Ingredients

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1 cup milk
  • 2 eggs, beaten
For the Yellow Rice:
  • 2 cups long-grain rice
  • 4 cups water
  • 1 teaspoon salt
  • 1 teaspoon turmeric
  • 1/2 cup raisins

Method

For the Bobotie:
  1. Preheat the oven to 350°F.
  2. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the curry powder, cumin, coriander, cinnamon, and turmeric and cook for another 2 minutes.
  4. Add the apricot jam, vinegar, and Worcestershire sauce and stir to combine.
  5. Add the ground beef and cook until browned, breaking it up with a spoon.
  6. Stir in the breadcrumbs and milk and cook until the mixture thickens, about 5 minutes.
  7. Transfer the mixture to a baking dish and spread it out evenly.
  8. In a separate bowl, whisk together the eggs and pour them over the top of the beef mixture.
  9. Bake for 30-35 minutes, or until the top is golden brown and the eggs are set.
For the Yellow Rice:
  1. Rinse the rice in cold water and drain.
  2. In a saucepan, bring the water, salt, and turmeric to a boil.
  3. Add the rice and raisins and stir well.
  4. Reduce the heat to low and cover the saucepan with a tight-fitting lid.
  5. Cook for 18-20 minutes, or until the rice is tender.
  6. Remove from heat and fluff the rice with a fork before serving.

Notes

Bobotie can be made with ground lamb or a combination of ground beef and lamb. The dish can also be made with dried fruit, such as apricots or raisins, instead of the apricot jam.
