Method
- Wash the rice and cook it in a pot with 2 cups of water until it's done. Set it aside.
- Heat the oil in a pan and add the mustard seeds and cumin seeds. Once they start to splutter, add the chopped onions and green chillies. Saute for a few minutes until the onions turn translucent.
- Add the chopped vegetables and saute for 5-7 minutes on medium heat. Make sure they are cooked but still have a crunch.

- Add the cooked rice and mix well with the vegetables. Turn off the heat.
- Add lemon juice and mix well. Adjust the salt and lemon juice according to your taste.
- Garnish with coriander leaves and serve hot.
