Ingredients

  • 1/2 teaspoon of cumin seeds
  • 1/2 teaspoon of turmeric powder

  • 1/4 cup of lemon juice
  • 2 tablespoon of oil
  • Salt to taste
  • Coriander leaves for garnishing

Equipment

  • A large pot for cooking rice
  • A pan for vegetables
  • A knife for chopping vegetables
  • A spatula for stirring

Method

  1. Wash the rice and cook it in a pot with 2 cups of water until it's done. Set it aside.
  2. Heat the oil in a pan and add the mustard seeds and cumin seeds. Once they start to splutter, add the chopped onions and green chillies. Saute for a few minutes until the onions turn translucent.
  3. Add the chopped vegetables and saute for 5-7 minutes on medium heat. Make sure they are cooked but still have a crunch.
  4. Add turmeric powder, red chilli powder, and salt. Mix well.
  5. Add the cooked rice and mix well with the vegetables. Turn off the heat.
  6. Add lemon juice and mix well. Adjust the salt and lemon juice according to your taste.
  7. Garnish with coriander leaves and serve hot.

  • You can use any vegetables of your choice such as beans, corn, or broccoli.
  • You can also add roasted peanuts or cashews for extra crunch.
