Ingredients

  • 1 tablespoon of vegetable oil
  • Salt and pepper, to taste

Method

  1. Clean the chicken and remove any excess fat. Rub the chicken with salt and pepper, inside and out.
  2. In a large pot, bring water to a boil. Add the chicken and pandan leaves. Cook for 20-25 minutes or until the chicken is cooked through. Remove the chicken and let it cool.
  3. In a pan, heat vegetable oil over medium heat. Add garlic and ginger and sauté for 1-2 minutes or until fragrant.
  4. Add rice to the pan and stir well. Add chicken broth and pandan leaves. Bring to a boil, then reduce the heat to low and cover the pan. Cook for 20-25 minutes or until the rice is cooked through.
  5. In a mixing bowl, mix sesame oil, soy sauce, and oyster sauce.
  6. Once the chicken has cooled, chop it into pieces and arrange on a serving plate.
  7. Arrange cucumber, chili, and green onion around the chicken.
  8. Drizzle the sauce mixture over the chicken and rice.
  9. Serve hot and enjoy!
