Method
1. Preheat oven to 350°F. 2. In a saucepan, heat the sugar over medium heat until it melts and turns golden brown. Pour the caramelized sugar into the bottom of a 9-inch cake pan. 3. In a large mixing bowl, whisk together the pumpkin puree, sweetened condensed milk, evaporated milk, eggs, cinnamon, ginger, nutmeg, salt, and vanilla extract until smooth. 4. Pour the mixture over the caramelized sugar in the cake pan. 5. Place the cake pan into a large roasting pan and fill the roasting pan with hot water, about halfway up the sides of the cake pan. 6. Bake for 1 hour and 15 minutes or until the flan is set. 7. Remove from the oven and let cool to room temperature. 8. Once cooled, refrigerate for at least 2 hours or overnight. 9. To serve, run a knife around the edge of the flan and invert onto a plate.
Notes
- Be sure to watch the caramelized sugar carefully, as it can burn quickly. - The water in the roasting pan helps the flan cook evenly and prevents the top from cracking. - The flan can be made a day ahead and refrigerated until ready to serve.
