- 1 cup rice
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon urad dal
- 1 teaspoon chana dal
- 2-3 dried red chilies
- 10-12 curry leaves
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon salt
- 2 tablespoons lemon juice
- 1 tablespoon chopped coriander leaves

Method
1. Rinse the rice in cold water until the water runs clear. 2. In a large pot or rice cooker, cook the rice according to the package instructions. 3. Once the rice is cooked, spread it out on a large plate to cool. 4. Heat oil in a medium-sized pan over medium heat. 5. Add mustard seeds, cumin seeds, urad dal, and chana dal to the pan. 6. When the mustard seeds start to pop, add the dried red chilies and curry leaves. 7. Stir the ingredients for about 30 seconds, then add turmeric powder and salt. 8. Mix well and turn off the heat. 9. Add the cooked rice to the pan with the spice mixture. 10. Add lemon juice and chopped coriander leaves to the rice. 11. Mix well until all the ingredients are evenly distributed. 12.
