  • 1 tablespoon of cumin
  • 1 tablespoon of dried oregano
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 cup of shredded cheddar cheese
  • 1/4 cup of chopped fresh cilantro

Method

1. Preheat your oven to 375°F. 2. In a large skillet over medium-high heat, brown the ground beef. Drain any excess fat. 3. Add the chopped onion, garlic, and red bell pepper to the skillet and cook until the vegetables have softened, about 5 minutes. 4. Add the can of diced tomatoes, tomato paste, cumin, oregano, salt, and black pepper to the skillet. Mix well and cook for another 5 minutes. 5. In a separate skillet, heat up some oil over medium heat. Add the sliced plantains and cook until they are golden brown on both sides. 6. In a baking dish, layer the cooked plantains on the bottom of the dish. 7. Add a layer of the ground beef mixture on top of the plantains. 8. Sprinkle some shredded cheddar cheese on top of the beef mixture. 9. Repeat the layering process with the remaining plantains, beef mixture, and cheese. 10. Bake the casserole in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly. 11. Top the casserole with chopped fresh cilantro before serving.

Notes

This dish can be made ahead of time and stored in the fridge or freezer for later. To reheat, simply place the casserole in the oven at 350°F for 15-20 minutes, or until heated through.
