Prep Time

10 minutes

Cook Time

25-30 minutes

Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons unsalted butter
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped carrot
  • 1/4 cup finely chopped celery
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 cups vegetable broth
  • 1 bay leaf

Equipment

  • Medium saucepan with lid
  • Knife and cutting board
  • Measuring cups and spoons
  • Wooden spoon

Method

  1. Rinse the rice in a fine-mesh strainer under cold running water until the water runs clear. Drain well.
  2. In a medium saucepan, melt the butter over medium heat. Add the onion, carrot, and celery, and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  3. Add the garlic, salt, and pepper, and cook for 1 minute more.
  4. Add the rice and stir to coat it in the butter and vegetables.
  5. Add the vegetable broth and bay leaf, and stir to combine.
  6. Bring the mixture to a simmer, then reduce the heat to low and cover the pan with a tight-fitting lid.
  7. Cook the rice for 18-20 minutes, or until all the liquid has been absorbed and the rice is tender.
  8. Remove the pan from the heat and let it sit, covered, for 5-10 minutes.
  9. Fluff the rice with a fork and remove the bay leaf before serving.

Notes

  • You can substitute any type of broth you prefer for the vegetable broth, such as mushroom or beef broth.
  • If you don't have fresh vegetables on hand, you can use frozen mixed vegetables instead.
  • For a richer flavor, you can add a tablespoon of olive oil to the butter before adding the vegetables.

Recipe Tips

  • Be sure to use a tight-fitting lid on your saucepan to prevent steam from escaping, which can affect the cooking time and result in undercooked rice.
  • If you like a more flavorful rice pilaf, you can add herbs such as thyme or rosemary to the vegetable mixture.
  • Leftover rice pilaf can be stored in an airtight container in the refrigerator for up to 3 days.
