Ingredients

Method

  1. Heat the wok or frying pan over medium-high heat and add the vegetable oil.
  2. Add the onion and garlic and stir-fry for 1-2 minutes until fragrant.

  4. Add the red bell pepper and frozen peas and stir-fry for another 2-3 minutes until tender.
  5. Push the vegetables to one side of the wok and add the beaten eggs to the other side.
  6. Let the eggs cook for a minute or so, then scramble them until fully cooked.
  7. Add the cooked rice to the wok and stir-fry for 3-4 minutes, breaking up any lumps of rice.
  8. Add the soy sauce, oyster sauce, salt, black pepper, and chilli flakes (if using) and stir-fry for another minute or so until the rice is evenly coated with the sauces and heated through.
  9. Remove from the heat and serve hot.

Notes

  • If you don't have leftover rice, you can cook fresh rice and let it cool completely before using it in this recipe.
  • You can use any combination of vegetables you like in this recipe.
  • If you want to make this dish vegan, you can omit the eggs and use a vegetarian oyster sauce.
