Cook Time

The cook time for this recipe is approximately 1 hour.

Ingredients

  • 1 cup uncooked wild rice
  • 1 lb boneless, skinless chicken breasts or thighs, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 oz sliced mushrooms
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp all-purpose flour
  • 2 tbsp butter

Equipment

  • Large pot or Dutch oven
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons
  • Wooden spoon

Method

  1. Rinse the wild rice and cook according to package instructions. Drain and set aside.
  2. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken and cook until browned on all sides, about 5 minutes. Remove from the pot and set aside.
  3. Add the diced onion and minced garlic to the pot and cook until softened, about 5 minutes.
  4. Add the sliced mushrooms and cook until they release their liquid and start to brown, about 5-7 minutes.
  5. Return the chicken to the pot and add the cooked wild rice, chicken broth, dried thyme, dried rosemary, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. In a small saucepan, melt the butter over medium heat. Add the flour and whisk until smooth. Cook for 1-2 minutes, whisking constantly.
  7. Add the heavy cream to the pot and stir to combine. Cook for 5-10 minutes, stirring occasionally, until the soup has thickened slightly.
  8. Stir the cream mixture into the soup and cook for an additional 5-10 minutes, until heated through.
  9. Taste and adjust seasoning as necessary.
  10. Serve hot with crusty bread or crackers.

Notes

  • You can use a combination of chicken breasts and thighs, or just one or the other.
  • If you prefer a thinner soup, you can use less wild rice or more chicken broth.
  • If you don't have heavy cream, you can use half-and-half or whole milk instead.
  • This soup can be made ahead of time and reheated on the stove or in the microwave.
