Method

1. Preheat the oven to 350°F. 2. In a mixing bowl, whisk the eggs until they are well beaten. 3. Add the evaporated milk, condensed milk, and vanilla extract to the bowl and mix until everything is well combined. 4. In a saucepan, add the sugar and water and heat on medium heat until the sugar dissolves and the mixture turns a golden brown color. 5. Pour the caramel into a 9-inch round cake pan and swirl it around so that it covers the bottom of the pan. 6. Pour the flan mixture on top of the caramel. 7. Place the cake pan in a larger pan and fill it with hot water until it reaches halfway up the cake pan. 8. Bake the flan for 1 hour or until a toothpick inserted into the center comes out clean. 9. Remove the flan from the oven and let it cool to room temperature. 10. Once the flan has cooled, run a knife around the edges of the pan to loosen the flan. 11. Invert the pan onto a serving platter and serve.
