Method

  1. Wash the basmati rice and soak it in water for 30 minutes.
  2. Heat oil in a pot and add bay leaves, cloves, cardamom pods, and cinnamon stick. Fry for a minute.
  3. Add the chopped onions and fry until golden brown.
  4. Add the ginger paste and garlic paste and fry for a minute.
  5. Add the diced chicken and fry until browned.
  6. Add the chopped tomatoes and fry until they are soft and mushy.
  7. Add the cumin powder, coriander powder, turmeric powder, chili powder, and garam masala. Fry for a minute.
  8. Beat the yogurt in a bowl and add it to the pot. Stir well.
  9. Drain the water from the soaked rice and add it to the pot. Add enough water to cover the rice and bring it to a boil.
  10. Cover the pot with a lid and reduce the heat to low. Cook for 20-25 minutes, or until the rice is cooked and the water has evaporated.
  11. Remove the pot from the heat and let it sit for 5 minutes.
  12. Fluff the rice with a fork and serve hot.
