Ingredients

  • 2 cups bullet rice
  • 2 onions, sliced
  • 2 tomatoes, chopped
  • 1 cup mixed vegetables (carrots, peas, beans)
  • 1/2 kg chicken or mutton
  • 2 tbsp ginger-garlic paste
  • 2 tbsp biryani masala powder
  • 1/2 cup curd
  • 2 tbsp ghee
  • Salt to taste
  • 3 cups water

Equipment

  • Large pot or pressure cooker
  • Frying pan
  • Spatula
  • Knife
  • Cutting board

Method

  1. Wash the bullet rice and soak it in water for 20 minutes.
  2. In a large pot or pressure cooker, heat ghee and sauté the onions until they turn translucent.
  3. Add the ginger-garlic paste and sauté for a minute.
  4. Add the chopped tomatoes and sauté until they turn mushy.
  5. Add the mixed vegetables and sauté for 2-3 minutes.
  6. Add the biryani masala powder and sauté for a minute.
  7. Add the chicken or mutton and sauté for 5-10 minutes.
  8. Add curd and salt to taste and mix well.
  9. Drain the water from the soaked rice and add it to the pot.
  10. Add 3 cups of water and mix well.
  11. Cover the pot with a lid and cook on low heat for 30-35 minutes or until the rice is cooked.
  12. Once the rice is cooked, turn off the heat and let it rest for 5-10 minutes.
  13. Serve hot with raita or pickle.

Notes

  • You can use any vegetables of your choice in this recipe.
  • If you do not have biryani masala powder, you can make it at home by roasting and grinding whole spices like cumin, coriander, cardamom, cinnamon, and cloves.
  • If you are using a pressure cooker, cook for 2-3 whistles and let the pressure release naturally.
