Method

1. Preheat the oven to 350°F. 2. Rinse the Cornish hens under cold water and pat them dry with paper towels. 3. Rub the Cornish hens with olive oil, thyme, salt, and pepper. 4. Place the Cornish hens in a roasting pan and roast for 1 hour. 5. While the Cornish hens are roasting, prepare the wild rice. 6. In a large saucepan, melt the butter over medium heat. 7. Add onions, celery, and carrots to the saucepan and cook until the vegetables are soft. 8. Add the wild rice and chicken broth to the saucepan and bring to a boil. 9.
