- 500g prawns, cleaned and deveined
- 2 cups of basmati rice
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 1 large tomato, chopped
- 1 tsp of turmeric powder
- 1 tsp of cumin powder
- 1 tsp of coriander powder
- 1 tsp of chili powder
- 1 tsp of garam masala
- 3 tbsp of vegetable oil
- Salt to taste
- 2 cups of water
- Fresh coriander leaves for garnish
Equipment
- A large frying pan
- A pot for cooking rice
- A wooden spoon or spatula
- A sharp knife for chopping vegetables
- A measuring spoon set
Method
- Wash the rice under running water until the water runs clear. Soak the rice in water for 30 minutes.
- Heat 2 tbsp of oil in a large frying pan over medium heat. Add the prawns and sauté for 5 minutes or until they turn pink. Remove from the pan and set aside.
- Add the remaining 1 tbsp of oil to the pan. Add the chopped onions and garlic and sauté until the onions turn translucent.
- Add the chopped tomatoes and cook for 5 minutes until the tomatoes are soft and pulpy.
- Add the turmeric powder, cumin powder, coriander powder, chili powder, and garam masala to the pan. Stir well and cook for 2-3 minutes until the spices are fragrant.
- Add the sautéed prawns to the pan and mix well with the spices. Cook for 5 minutes until the prawns are coated with the spices.
- Add 2 cups of water to the pan and bring to a boil. Reduce the heat to low and cover the pan with a lid. Cook for 10-15 minutes until the prawns are cooked through and the gravy has thickened.
- While the prawns are cooking, drain the soaked rice and add it to a pot along with 4 cups of water. Add salt to taste and bring to a boil.
- Reduce the heat to low and cover the pot with a lid. Cook for 15-20 minutes until the rice is cooked through and all the water has been absorbed.
- Fluff the rice with a fork and transfer it to a serving dish. Add the curried prawns on top of the rice and garnish with fresh coriander leaves.
- Serve hot and enjoy!
