Ingredients

  • 500g prawns, cleaned and deveined
  • 2 cups of basmati rice
  • 1 large onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 large tomato, chopped
  • 1 tsp of turmeric powder
  • 1 tsp of cumin powder
  • 1 tsp of coriander powder
  • 1 tsp of chili powder
  • 1 tsp of garam masala
  • 3 tbsp of vegetable oil
  • Salt to taste
  • 2 cups of water
  • Fresh coriander leaves for garnish

Equipment

  • A large frying pan
  • A pot for cooking rice
  • A wooden spoon or spatula
  • A sharp knife for chopping vegetables

Method

  1. Wash the rice under running water until the water runs clear. Soak the rice in water for 30 minutes.
  2. Heat 2 tbsp of oil in a large frying pan over medium heat. Add the prawns and sauté for 5 minutes or until they turn pink. Remove from the pan and set aside.
  3. Add the remaining 1 tbsp of oil to the pan. Add the chopped onions and garlic and sauté until the onions turn translucent.
  4. Add the chopped tomatoes and cook for 5 minutes until the tomatoes are soft and pulpy.
  5. Add the turmeric powder, cumin powder, coriander powder, chili powder, and garam masala to the pan. Stir well and cook for 2-3 minutes until the spices are fragrant.
  6. Add the sautéed prawns to the pan and mix well with the spices. Cook for 5 minutes until the prawns are coated with the spices.
  7. Add 2 cups of water to the pan and bring to a boil. Reduce the heat to low and cover the pan with a lid. Cook for 10-15 minutes until the prawns are cooked through and the gravy has thickened.
  8. While the prawns are cooking, drain the soaked rice and add it to a pot along with 4 cups of water. Add salt to taste and bring to a boil.
  9. Reduce the heat to low and cover the pot with a lid. Cook for 15-20 minutes until the rice is cooked through and all the water has been absorbed.
  10. Fluff the rice with a fork and transfer it to a serving dish. Add the curried prawns on top of the rice and garnish with fresh coriander leaves.
  11. Serve hot and enjoy!

Notes

This recipe can be made with any type of prawns, fresh or frozen. If using frozen prawns, thaw them completely before using. You can also add vegetables like peas or carrots to the recipe to make it more nutritious. Adjust the amount of chili powder according to your taste preference.
