Ingredients

  • 2 cups cooked rice
  • 2 eggs
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 capsicum (bell pepper), finely chopped
  • 2 green chillies, finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp red chilli powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 2 tbsp oil
  • Salt to taste
  • Coriander leaves for garnish

Equipment

  • Wok or frying pan
  • Bowl
  • Knife
  • Cutting board
  • Spatula

Method

  1. In a bowl, whisk the eggs and set aside.
  2. Heat oil in a wok or frying pan over medium heat.
  3. Add the chopped onions and sauté until golden brown.
  4. Add the ginger-garlic paste and sauté for a minute.
  5. Add the chopped carrots and capsicum and sauté for 2-3 minutes.
  6. Add the green chillies, red chilli powder, cumin powder, coriander powder, and garam masala powder and sauté for a minute.
  7. Add the whisked eggs and scramble until cooked.
  8. Add the cooked rice and salt to taste and mix well.
  9. Garnish with coriander leaves and serve hot.

Notes

  • You can add any other vegetables of your choice such as peas or beans.
  • You can increase or decrease the spice level according to your preference.
  • You can also add some soy sauce or vinegar for flavor.
