- 2 cups cooked rice
- 2 eggs

- 2 green chillies, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp red chilli powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp garam masala powder
- 2 tbsp oil
- Salt to taste
- Coriander leaves for garnish

- Wok or frying pan
- Bowl
- Knife
- Cutting board
- Spatula
Method
- In a bowl, whisk the eggs and set aside.
- Heat oil in a wok or frying pan over medium heat.
- Add the chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for a minute.
- Add the chopped carrots and capsicum and sauté for 2-3 minutes.
- Add the green chillies, red chilli powder, cumin powder, coriander powder, and garam masala powder and sauté for a minute.
- Add the whisked eggs and scramble until cooked.
- Add the cooked rice and salt to taste and mix well.
- Garnish with coriander leaves and serve hot.
Notes
- You can add any other vegetables of your choice such as peas or beans.
- You can increase or decrease the spice level according to your preference.
- You can also add some soy sauce or vinegar for flavor.
