Description

Hainan rice is a popular dish in Southeast Asian countries, particularly in Hainan Province, China. It is a simple yet flavorful dish made with fragrant rice and served with chicken broth, sliced chicken, and chili sauce. This dish is traditionally cooked using a pot, but with the help of a rice cooker, you can easily whip up a delicious Hainan rice in no time.

Ingredients

  • 2 cups jasmine rice
  • 2 cups chicken broth
  • 1 pound chicken thighs, boneless and skinless
  • 2 cloves garlic, minced
  • 1-inch ginger, sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon vegetable oil
  • Water

Method

  1. Wash the rice thoroughly until the water runs clear. Drain the rice and set aside.

  3. Add the chicken thighs, soy sauce, sesame oil, salt, and sugar. Cook until the chicken is no longer pink.
  4. Remove the chicken from the saucepan and slice into thin pieces. Set aside.
  5. Add the chicken broth to the saucepan and bring it to a boil.
  6. Place the washed rice in the rice cooker and add enough water to reach the 2-cup mark.
  7. When the chicken broth comes to a boil, pour it over the rice in the rice cooker.
  8. Cook the rice in the rice cooker until it is done.
  9. Fluff the rice with a fork and serve with the sliced chicken and chili sauce.

Notes

  • You can use chicken breast instead of chicken thighs if you prefer.
  • To make the chili sauce, mix together chopped red chilies, garlic, ginger, vinegar, and sugar.
  • You can also use a rice cooker with a “Hainan rice” setting to make this dish.
