- 1 cup basmati rice

- 1 onion, chopped
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 tomato, chopped
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon salt
- 2 cups water
- 2 tablespoons freshly chopped coriander leaves

Method
- Wash the basmati rice in cold water until the water runs clear. Soak the rice in cold water for 15 minutes.
- In a large pot, heat the ghee over medium heat. Add the cumin seeds, cinnamon stick, cloves, green cardamom pods, and bay leaf. Fry for 30 seconds or until fragrant.
- Add the chopped onion and fry until golden brown.
- Add the ginger paste and garlic paste. Fry for 1 minute or until fragrant.
- Add the chopped tomato and fry until soft.
- Add the red chili powder, coriander powder, turmeric powder, and salt. Fry for 1 minute or until fragrant.
- Add the fresh green peas and fry for 2 minutes.
- Drain the soaked rice and add it to the pot. Fry for 2 minutes.
- Add 2 cups of water and bring to a boil. Cover the pot with a lid and reduce the heat to low. Simmer for 18-20 minutes or until the rice is cooked and the water has been absorbed.
- Garnish with freshly chopped coriander leaves and serve hot.
Notes
- If you don't have fresh green peas, you can use frozen peas instead.
- You can adjust the amount of spices according to your taste.
