Ingredients

  • 1 onion, chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 tomato, chopped
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon salt
  • 2 cups water
  • 2 tablespoons freshly chopped coriander leaves

Method

  1. Wash the basmati rice in cold water until the water runs clear. Soak the rice in cold water for 15 minutes.
  2. In a large pot, heat the ghee over medium heat. Add the cumin seeds, cinnamon stick, cloves, green cardamom pods, and bay leaf. Fry for 30 seconds or until fragrant.
  3. Add the chopped onion and fry until golden brown.
  4. Add the ginger paste and garlic paste. Fry for 1 minute or until fragrant.
  5. Add the chopped tomato and fry until soft.
  6. Add the red chili powder, coriander powder, turmeric powder, and salt. Fry for 1 minute or until fragrant.
  7. Add the fresh green peas and fry for 2 minutes.
  8. Drain the soaked rice and add it to the pot. Fry for 2 minutes.
  9. Add 2 cups of water and bring to a boil. Cover the pot with a lid and reduce the heat to low. Simmer for 18-20 minutes or until the rice is cooked and the water has been absorbed.
  10. Garnish with freshly chopped coriander leaves and serve hot.

Notes

  • If you don't have fresh green peas, you can use frozen peas instead.
  • You can adjust the amount of spices according to your taste.
  • You can also add a few cashew nuts or raisins to the rice for extra flavor.
