Ingredients

  • 1/2 cup basmati rice
  • 4 cups whole milk
  • 1/2 cup grated jaggery

  • 1/4 cup chopped almonds and cashews
  • 1 tablespoon raisins

Method

  1. Wash the rice thoroughly and soak it in water for 30 minutes.
  2. In a heavy-bottomed pot, heat the ghee and add the chopped nuts and raisins. Fry until the nuts turn golden brown.
  3. Add the soaked rice to the pot and sauté for a few minutes until the rice turns slightly opaque.
  4. Add the milk and cardamom powder to the pot and stir well.
  5. Let the mixture come to a boil and then reduce the heat to low. Simmer the kheer for 30-35 minutes, stirring occasionally, until the rice is cooked and the mixture thickens.
  6. Add the grated jaggery to the pot and stir well until it dissolves.
  7. Continue to simmer the kheer for another 10-15 minutes until it thickens further and reaches a pudding-like consistency.
  8. Turn off the heat and let the kheer cool for a few minutes.
  9. Garnish with chopped nuts and serve warm or chilled.

  • You can adjust the amount of jaggery according to your taste.
  • If you prefer a smoother texture, you can blend the kheer in a blender before serving.
